Farfalle with Summer Sauce
- 1 lb of Farfalle pasta
- ⅓ cup of olive oil
- ⅓ cup of lemon juice
- 14 oz of diced tomatoes
- 1 tbsp of dried basil

- 1 tsp of granulated garlic
- 1 tsp of salt
- ½ tsp of pepper
- 1 cup of frozen peas
- 1 cup of shredded mozzarella cheese
|
- Boil water and cook pasta
- While pasta is cooking, mix together oil, lemon juice, tomatoes, basil, garlic, salt and pepper in a bowl. Set aside.
- Drain pasta and pour back into pot or large bowl.
- Add in peas and cheese.
- Mix sauce in.

Shrimp Scampi
- ½ lb of shrimp
- ¼ lb of butter
- ¼ cup of olive oil
- 2 cloves of garlic
|
- Salt (to taste)
- Pepper (to taste)
- ½ cup of white wine
- Parsley
|
- Heat oil and butter in pan
- Saute garlic for 30 sec
- Add shrimp to pan and cook until pink (about 5 min)
- Add salt and pepper to taste
- Add wine and cook for 2 min
- Garnish with parsley
- Serve over rice or pasta

Banana Bread
- 3 ripe bananas
- 2 cups of flower
- 1 tsp of baking soda
- 1 tsp of salt
|
- 1 tsp of vanilla extract
- 2 eggs
- 1 stick (½ cup) of butter
- 1 cup of sugar
|
- Preheat oven to 350 degrees
- Mash bananas
- Mix in sugar
- Mix in melted butter
- Mix in eggs and vanilla extract
- Mix in separate bowl flour, salt and baking soda and slowly add to banana mixture
- Grease pan
- Pour batter into pan
- Bake at 350 for 45 minutes

Pasta Fagioli
- 1 cup of Ditalini pasta
- 1 medium chopped onion
- ¼ cup of olive oil
- 3 cloves of garlic
- 1 can of diced tomatoes
- 1 19oz can of cannellini beans

- 1 tsp of salt
- ¼ tsp of pepper
- 1 tsp of oregano
- 1 tsp of basil
- 1 tsp of parsley
|
- Cook pasta, set aside
- Cook garlic & onions in olive oil till golden
- Add tomatoes, salt, pepper, basil, parsley, and oregano. Cook for 20 min on low heat
- Add beans and one can of water. Cook till beans are heated then add pasta and cook for 10 min.

Microwave Frittata
- 3 large eggs
- 1 red bell pepper, chopped
- ½ cup of broccoli, chopped
- 1 small onion, chopped
- 1 tbsp of spinach, chopped

- ⅛ tsp of pepper
- 1 cup of shredded cheddar cheese
- 1 cup of cooked cubed ham
- ¾ tsp of salt
|
- Chopped vegetables
- Put peppers and onions into pan and put in microwave covered for 3 min, drain
- Whisk eggs with salt and pepper
- Mix in spinach, broccoli, ham, and cheese
- Pour into pan over onions and peppers
- Microwave for 8-9 minutes or until a knife inserted in the center comes out clean

Minion Rice Krispy Treats
- 6 cups of mini marshmallows
- 6 cups of rice krispy cereal
- 6 tbsp of butter (3 6s ooo spooky)

- Black icing
- Blue and yellow food coloring
|
- Melt the butter in a medium pan on medium heat.
- Add Mini Marshmallows, stir until they are completely melted
- Add food coloring
- Turn off the heat.
- Add the Rice Krispie Cereal and mix until the cereal is completely coated with the Marshmallow Mixture
- Repeat 1-5 with second color
- Spoon into a 9×11″ shallow pan
- Press down into the pan
- Allow to cool
- Cut into squares
- Shape into minion shape (semi-oval kind of shape)
- Decorate!

Gnocchi and Chicken in Pesto
- 1 package of gnocchi
- Boneless chicken breasts
- Olive oil
- Basil
- oregano
|
- 1 jar of Barilla pesto sauce
- 1 broccoli crown
- Salt
- Pepper
|
- Chop the chicken and cook in pan in olive oil
- Season chicken with basil, salt, pepper, oregano to taste
- While chicken is cooking, boil water for gnocchi
- Boil gnocchi, stirring occasionally until it floats to the top
- Chop and saute broccoli in pan in olive oil
- Mix chicken, gnocchi, and broccoli in pesto sauce
- Serve

Fajitas
- 1 red bell pepper
- 1 green bell pepper
- 1 medium onion
- Mexican seasoning
|
- 1 cup of shredded cheese
- Cooked rice
- 3 boneless chicken breasts
- Flour tortillas

- Cook rice, set aside
- Slice chicken into thin slices
- Cook and season chicken in skillet, set aside
- Slice peppers and onion into thin slices
- Cook and season vegetables in skillet
- Serve with sides of choice (salsa, cheese, guac, sour cream, beans, etc.)

Sausage and Peppers over Pasta
- 1 box of medium shell pasta
- 1 lb of sweet italian sausage
- 1 cup of white wine
- 6 tbsp of olive oil
- ½ cup of grated parmesan cheese
|
- 1 red bell pepper, sliced
- 1 green bell pepper, slices
- 3 cloves of garlic, minced
- 1 large onion, chopped
- ½ tsp of salt
- ¼ cup of parsley, chopped

- Prepare pasta as directed on box, drain
- Toss pasta with 2 tbsp of olive oil
- Cook and stir sausage until well cooked
- Stir in wine into pan and cook for 10 minutes
- Remove mixture from skillet and set aside
- Add remaining oil to skillet and add in chopped and sliced vegetables
- Stir vegetables until crisp-tender
- Add garlic and cook for 30 seconds
- Add sausage with parsley
- Add cheese, salt, and pepper to pasta bowl
- Toss ingredients together and serve

Mac and Cheese
- 1 box of elbow macaroni
- 1 bag of shredded cheddar cheese
- 1 bag of shredded mozzarella cheese
- 4 tbsp of butter
- basil

- 3 cups of milk
- Bread crumbs
- pepper
- salt
- Flour (about ½ cup)
- ¼ cup of cream cheese
- oregano
|
- Boil pasta as directed
- Melt butter into pan
- Add flour until it becomes a roux
- Add milk slowly, stir constantly
- Stir in 2 cups of cheddar and 2 cups of mozzarella cheese
- Add in cream cheese
- Season to preference
- Cook until cheese is melted
- Pour pasta into casserole dish and pour cheese sauce over it, spread evenly
- Put in oven at 350 degrees for 15 minutes
- After 15 minutes, remove from over, sprinkle with breadcrumbs and more cheese
- Place back in over for 15 minutes or until edges start to turn brown
- Serve
